EASY PINEAPPLE UPSIDE-DOWN CAKE

Comment:
When you’re camping out, a sweet dessert is always welcome around the campfire. This recipe is easy and sure to please all the campers.

Ingredients:
1 (20-ounce) can pineapple slices, juice reserved
1 (18.25-ounce) box yellow cake mix
½ cup butter
1 cup brown sugar
8 maraschino cherries
1 cup water
3 eggs
 
Method:
In a 12-inch Camp Dutch oven, over hot coals, melt butter. Remove Dutch oven from heat. Sprinkle brown sugar around oven bottom. Evenly distribute pineapple slices over brown sugar. Place cherries in center of each pineapple slice. In a medium bowl, whisk together cake mix, eggs, reserved juice and water 2–3 minutes or until well combined. Spoon cake mixture over pineapple slices. Place Dutch oven over 6 coals with 18 coals on lid. Cook 25–30 minutes. Remove from fire and remove lid. Place serving plate over Dutch oven and carefully invert, allowing cake to drop onto plate.
